Instructions
1. Crisp the Prosciutto: Place prosciutto slices in a dry skillet over medium heat. Cook 2–3 minutes per side until lightly crisped. Remove and let cool — it will firm up as it rests.
2. Make the Velvet Hot Honey: In the same pan, reduce heat to low. Add honey, chili flakes, cayenne, vinegar, and butter. Stir gently for 2–3 minutes until warm and glossy. Remove from heat and let it sit 5 minutes.
3. Build a Creamy Foundation: In a bowl, fold cottage cheese with mascarpone until slightly blended but still textured. Spread into a shallow bowl. Drizzle olive oil, then finish with salt and cracked pepper.
